Two 16oz. Steaks

The Cut - 

A Sirloin Steak has many faces.  It's also referred to as a Shoulder Steak, Blade Steak, Butt Steak, and St. Louis Steak.  They are slowly making their way into kitchens as some of the most flavorful cuts of pork you can have!  BBQ and game-day just found a new friend.   

The Preparation - 

Generously season this steaks with salt and pepper, or your favorite spice mix and grill for about 15 minutes, flipping halfway through. You can also put a quick sear on them and transfer them in a pan over medium heat and add a mixture of equal parts beer and barbecue sauce until submerged. Cook 'em for a least an hour. 

The Location - 

Just Below the Boston Butt on the shoulder, you'll find the picnic area of the hog.  When cut into thinner portions, it becomes very versatile.
