Country Ribs really aren't ribs at all. They're 1-2" slices of meat cut from the Boston Butt. Most of the time you'll find the shoulder blade in one of these cuts. It's a good way to enjoy the taste of a roast without having to stand by the smoker for 8 hours.
You're going to want to do the obvious here - Low and, well kinda slow. Our favorite ribs are cooked at 275-300 for 2 hours. Sprinkle on your favorite rub - and cover with foil. After that, turn the oven down to 250, smother on some of your favorite BBQ sauce and put them back in to the oven for an hour or so.
