The Cut - 

Leg Quarters  have always been a weekly staple for us at the farm.. They’re incredibly versatile, economical, quick to cook and let’s face it, they’re pretty hard to screw up. With these pasture-raised thighs, they’re not just easy — they’re shockingly flavorful.  Our pasture-raised birds are treated with the highest regard for animal welfare, and the result is tremendous flavor. 

The Preparation - 

While there are countless ways to make these puppies, we like searing them in a cast iron pan to get crispy skin before finishing them in the oven. Toss your favorite vegetable in the rendered fat and roast for a simple side dish. Pro-tip: Pat the skin dry before seasoning to achieve the perfect crispy finish. Always cook your chicken to 165°F.

The Location - 

Chicken Thighs & Legs get a great workout, which means that this cut is extra flavorful. Our chicken is never pre-brined, injected with fillers, or treated with preservatives.
